Karl uses fingerlimes in his inspired Asian fushion recipes and Katrina has created the most stunning desserts with the fingerlimes featuring as the hero of the dish.

Harvest Restaurant, Newrybar
Sam Curtis the genius behind the bar has been experimenting with all manner of native ingredients to mix innovative, delicious drinks, he has created syrups and liqueurs that he blends with fine spirits into exhilarating cocktail experiences.
Sam Curtis was introduced to the perfect product for the bar in the form of freeze dried Fingerlimes and Davidson plum. It comes in a slightly grainy powder form that works as an ingredient or a garnish, especially on the rim of your cocktail glass.
Four Pillars Gin
Four Pillars Navy Strength Gin is a powerful 58.8% alcohol. This gin is designed for citrus based cocktails like Southsides , Gimlets and Mules but also makes a refreshing G&T when garnished with ginger and a lime leaf.
When creating the recipes we found that the native Fingerlime was incredible.
The bright citrus character when distilled also showed a lovely vanilla softness that added texture and weight to the gin. The finger lime character works beautifully with with south east Asian spices to create a very interesting gin, which has now won a Masters Award three years in a row at the Global Spirit Masters in the UK. It also won the trophy for best gin across all categories at the IWSC in Hong Kong.
